Ricotta Cheese | Recipe




Nix those suspicions that good and healthy food comes with an exorbitant price tag. Making food from scratch has its own hidden benefits. Homemade Ricotta Cheese is one such recipe that is immensely easy to make and tastes delicious.

Food blogger Tarika Singh brings you her recipe of homemade Ricotta cheese, the delicious key ingredient in most Italian dishes.

Ingredients:

3 cups full fat milk

2/3 cup cream

1/2 tsp. sea salt

4 tbsp. lemon juice

Method:

- Take a non-reactive pan and put the full fat milk, cream and sea salt in it.

- Stir together the milk, cream and sea salt with a wooden spoon over a medium-high heat.

- Heat this unto 94 degrees Celsius using a food thermometer.

- On reaching the temperature, take the pan off the heat.

- Add the lemon juice, stir it into the milk gently and let it rest for about 10-15 minutes to curdle. and add the lemon juice to it and stir gently.

- Let it rest for about 5 - 10 minutes.

- After 10 minutes, take a bowl, place a mesh strainer over it and line it with a muslin cloth.

- Pour the curdled mixture over the muslin and let the whey drain out completely for about 60 -- 90 minutes.

- Your homemade ricotta is ready and it will store for about 2 -- 3 days in a refrigerator.
