Schezwan Potatoes

Schezwan Potatoes

A weekend party is incomplete without a quick homemade delicious appetizer! Fry some potatoes, toss up some vegetables and mix it with the spicy sauce, thats the simple three step process to a great snacks recipe. Chef Shantanu Gupte brings you an easy to make super tasty dish which needs few basic ingredients from your kitchen.

4-5 medium size Potatoes ( pre boiled )
1 tsp Salt
1 tbsp Cornflour
1 tsp Soya Sauce
1 head Spring Onion ( leaves )
1 Spring Onion ( onion)
2 Celery Stems
1 tbsp Oil
2-3 tbsp Schezwan Sauce
1 tbsp water & 1 tbsp Cornflour
Black Pepper
1 tsp Black Sesame
1 tsp White Sesame ( Pre toasted )

- Cut boiled potatoes in big chunks and put in a bowl
- Add salt, cornflour, soya sauce to it and toss them up
- Add them to hot oil and fry it till it becomes crisp & brown
- Once fried take them out on a plate with absorbent paper / tissue on it.
- Chop some spring onions leaves, onions, celery and keep it aside in a bowl
- Heat some oil in a pan and sauté onions and celery
- Sprinkle some salt to it and add fried potatoes
- Toss everything and add Schezwan sauce to it
- Mix everything well and sprinkle some water
- Mix cornflour and water in a bowl
- Pour the cornflour paste on the pan and mix well
- Pour half of the chopped spring onions, freshly crushed black pepper, few black sesame, few white sesame and toss everything well
- Empty the content in a plate
- Sprinkle the rest of the spring onions, few black sesame, few white sesame seeds and its ready to be served hot.
